Xanthan Gum is a plant-based thickening and stabilizing agent. It is named for the bacteria, Xanthomonas campestris, which plays a crucial role in this description. Technically speaking, xanthan gum is a polysaccharide, which is just a fancy way to say "a string of multiple sugars." To create xanthan gum, the Xanthomonas campestris bacterium is allowed to ferment on a sugar. The result is a gel that is then dried and milled to create the powder substance. This does what it's supposed to do, and Prime saves me the hassle of going to the specialty market. A word of caution: if you spill any of this product, you need to sweep or vacuum it up. Do not, under any circumstances, attempt to clean it up with water. You will have a slippery mess on your hands.

I'm on a low-carb diet by medical necessity. Sugar free instant pudding is one of my go to desserts. Only dairy (cow's) milk will react with the instant pudding mixes properly to set up. I use unsweetened almond milk for mine as it has a negligible carb count but the pudding won't set with it...UNTIL...Boom! I add about a 1/2 teaspoon of this stuff and voila--pudding that sets up. A dollop of xylitol sweetened home-whipped heavy cream tops it all off nicely.

This Xanthan Gum is a must for gluten free baking but it also works well to prevent ice crystals from forming in your homemade ice cream..use about 1/4 a teaspoon for every 3 cups of milk or cream. You won't have to use corn syrup anymore. Be careful though don't put too much in your ice cream mixture or it will come out like taffy.
